Got the immediate family together early for Thanksgiving dinner tonight. So it was: Smoked Turkey, mashed potatoes with gravy, sweet potatoes, cream cheese corn, apple salad, green bean casserole, raw veggies and dip, cranberry sauce, rolls, deviled eggs, Chex mix. And then - pecan pie, pumpkin pie, homemade pumpkin spice ice cream. I hope that you had the shades pulled and the lights dimmed. The Governator is on the lookout. 😜🤠

In my quest for knowledge, I will have to bring a Double Quarter Pound Burger home and analyse it. I suspect that the cooked weight of meat is about 6 ounces. In the mean time my wife had a 14 oz burger at the County Seat Cafe. 6.95. They are thinking about raising their prices by a dollar. I told the waitress that that would be perfectly understandable. WoW! That must have been some Burger!! I love the price.

Two small El Monterey Breakfast Burritos with Applewood smoked Bacon, egg, potato and queso. Microwave from frozen and then into a steel pan for crispening and final heating.
Pot of tea.
NY Times Crossword.
Then I start prepping the turkey, stuffing and make a pie.

WoW! That must have been some Burger!! I love the price. They are so good. They get their meat from the local market. Local cows, fresh fresh fresh! 2 kinds of cheese, grilled onions, mushrooms, and bacon. She ordered it without the bun as she is on a "diet". 😁🤠

I think my bird is defrosted. SO, I am going to work on the stuffing and get it the oven ASAP. I do not care if it done tonight. Then I can focus on making a pumpkin pie tomorrow. Neighbor came by an dropped off another bird. I have no place to put it but hang it on the back porch and hope it stays cold!! The freezer in my refer is about the size of a breadbox.

Boid in oven.
Stuffing: bread chunks, onion, garlic, celery, Jalapeño, green bell pepper, diced smoked duck, whole oysters in their broth, chicken stock, dried cranberries.
Should be interesting.

The leftover Stuffing went into a buttered baking dish and was topped with lean strips of good quality bacon.
I am not doing mashed potatoes or yams. I might bake squash. Too many carbs and too much food.
Turkey neck, liver and kidney simmering all day with bay leaf, sage, pepper, thyme. I gotta make a giblet gravy. That is the law.

I have all 4 of my grown daughters here right now for the holiday, and they're all great cooks like their momma. So Im having to be careful, or Im gonna gain back all 30 lbs I lost this summer.
They put a huge pot of pinto beans on this morning, and I hear we are having burritos for supper. That's a bit of relief, I can eat this meal without feeling guilty about saddling that first horse come spring. 😅 I just go easy on the sour cream and eat to my heart's content.

The turkey is out and well ladled with the pan juices.
The Stuffing. Indescribable. Perhaps the best I have had in a long time. I mixed the wet from the bird with the dry from the baking dish. Home smoked duck and oysters really make a difference. The turkey is mighty good. I have not had this meal in a long time. Not last year or the year before.
tomorrow, I will mash baked acorn squash for another side. Brussels Sprouts.

Your gumbo soup sounds delicious! It's Campbell's. 😁🤠 I used to enjoy their Gumbo soup. I move on to Progresso Brand, less salty and better ingredients. I still enjoy Campbells Tomato, Chicken Noodle and Golden Mushroom.
