Brought home four pounds of Mayacoba Peruvian beans. AKA Canary Beans owing to their sulfur yellow color. They are considered by thems which knows, Latin American Chefs, to be the most flavorful of beans with a creamy texture. Digestible!!! Maybe their farts smell of roses? I do not know but will soon find out. They were on deep sale. I could not resist. LOL... when I start hearing explosions I’ll know it’s you! 🤪 In much of the southwest, beans are a staple food. They are often eaten more frequently than potatoes or other starches. Since they are eaten so often, the digestive tracts of the residents can handle beans without much distress and flatulence. Jokes are still made about it but the only real problem is when they are undercooked. At this elevation, that can occur easily. Hence, pressure cookers. I am not expecting much in the way of "disruptions". However, as with any new bean, quien sabe?

Last turkey sandwich. Lettuce and whipped Cream Cheese instead of mayo. Cranberry sauce.
Making a large pot of black bean and red lentil zouppe with diced yellow, red, green bell peppers, jalapeños, onions, celery, carrots, garlic, turkey and chicos. The stock is half turkey and half smoked ham shank. There is some kind of spicy masa mix which goes in at the end. A Deer Valley, UT thing my cousin sent me. Supposed to thicken into a chili con carne of some sort.
It cannot go wrong. It is supposed to be what becomes of the turkey left overs. Something they do in Utah.

Sitting down to some spicy soup with salt and vinegar chips. Yup... think I’m coming down with a cold. It’s the only time I crave potato chips.

2nd turkey done. Enjoyed a leg and a wing at Zero Dark 45.
Found a jar of cranberry relish made by a neighbor and given to me last year. Still good and tasty. The irony in this is she is full Mohawk, does not approve of Columbus or the Pilgrims. She is a good neighbor.

Experimenting this morning, tv promotes the Air Fryer Wife is a thrifty German gal but loves scratch offs, , just gave her a small cane check, she went to Walmart for coffee, looked at AirbFryers, didn’t buy one. Came back and we have a big toaster oven that does Convection cooking, she puts sweet potato frys and does the Convection thing, they come out great. This morning she says I wonder how it will do on regular fries, I say have at it. Just finished French fries for breakfast, frugal gal says I don’t think we need a Air Fryer, my reply to her. More Money for Scratch Offs!!

I scrambled 4 eggs with onion and cheese and wrapped them in a couple of tortillas, but this time I tried some new seasoning, something called Tajin that my daughter brought in. It was a nice change, although too much of it would probably end up being pretty bad
