Christmas 1971 I spent at Taco Bell. Me and a pal had $2 between us for Christmas Dinner. The asshat we worked for never showed up to pay us on Christmas Eve. Fortunately, $2 was enough back then. Not a feast but enough. Just before I retired I was trying to maximize my 401k and I allowed myself 10 bucks a week for lunch. Taco Bell and the 2 for a dollar Jack tacos were lifesavers.

greets & happy eating all. To be Schwan #662 (2 large) toaster waffles, one cycle. Add usuals & nuke to plateful of mess. k-cup cocoa & all to smoking room, eat & continue with the papers. Nothing special food-wise for later, just normal stuff planned

We ate this last night, Wife is not a steak eater, she ate Gumbo. I like the Sizzle Platter. Steak and sides look mighty tasty.

Well, the Feast of the Seven Fishes went off without a hitch. We hosted three of our friends from our quarantine pod, and had a wonderful dinner and evening together. Started the evening off with shrimp cocktail, scallops wrapped in bacon, crab stuffed mushrooms, spinach bread, and antipasti. Then for dinner, it was linguine with clam alfredo, stuffed flounder, marinated salt cod, fried salt cod patties, and marinated calamari.
It was a very different Christmas, but still enjoyable and festive.

Had corned beef hash and scrambled eggs for breakfast. Going to start a steak and potato Christmas meal soon.
Had our family get together earlier this week. Enjoying Christmas day alone with the wife - and loving it. No fuss. Just relaxing and enjoying the day.

Last evening I made another leek concoction. I don't cook with recipes, I just toss it together as the spirit moves me. So... I cut a 10-12" stalk of leek into half-inch medallions. (Still have two leeks to go!) Put them in a large soup bowl with black olives, pesto (about 2 TBS), and some cashew halves. Pecans, walnuts, or chopped almonds would have also worked. Grilled up a dozen or so pieces of thin sliced pepperoni 'til they were going crisp. Put them on a separate plate and did not mix them into the bowl. MW'd the bowl for about 1:!5— not too much, the leeks need to still be crunchy and firm, but hot. That's it. No olive oil needed as the pesto takes care of that. Eaten with the accompaniment of my vino da tavola. IMO a very successful meal.

Cheeseburger & Onion Rings ... another cafeteria xmas meal for me. The years I spent working Christmas the company cafeteria was closed. There was no leaving the premises until end of shift. No ordering in back then (1973-1976). What there was for food were vending machines including hot ones. So, I my usual Christmas meal was a bean burrito smothered with a small tin of Dennison's Chile Con Carne and heated in the microwave oven. Actually tasted good and was hot. We would gather in the empty cafeteria dining room and make the best of it.

Christmas dinner was filet mignon, scalloped potatoes, garlic bread, and an apple tart. All from Omaha Steakhouse. A Christmas present from my wife's parents.
Good food, but the filets were only about 4oz, so I added an 8oz sirloin to the Ninja grill. No picture, since Imgur.com is overloaded right now.

Did dry-aged ribeyes on the grill, oven-roasted potatoes, and leftover crab stuffed mushrooms for dinner. I have some pictures, but I don't have the energy to upload them, lol.

That is pretty crazy Justin. A good kinda crazy but crazy nonetheless.
I love to cook, but three dishes for a meal are about tops with me. You have to have the determination, planning and skill sets to pull off a meal like that. That dinner in a restaurant would set you back a few bucks.

Thanks, Charlie. It does take a fair bit of planning and prep, but luckily much of it can be staged before hand, so it really is just timing it out of the fridge or oven.
