Leftover Chile Verde tortilla and a chicken tender for breakfast. Leftovers getting cleaned up in the next day or so.

Lunch is lentil leak soup, the last of that for a while.

My co-worker brought in xmas leftovers so I'm having Roast Beef, Glazed Ham, Mashed Potatoes, Mixed Veggies and Yorkshire Pudding. I'll wash that all down with some fresh coffee before heading back to work.

My co-worker brought in xmas leftovers so I'm having Roast Beef, Glazed Ham, Mashed Potatoes, Mixed Veggies and Yorkshire Pudding. I'll wash that all down with some fresh coffee before heading back to work. I might have to whip up yorkshire pudding to go with this evenings left over roast beef. Thanks for the reminder.

I might have to whip up yorkshire pudding to go with this evenings left over roast beef. Thanks for the reminder. I made yourshire pudding once, and I did something drastically wrong, it tasted like greasy grease. The drippings from prime rib I get now, typically end up in a drip pan down between the coals rendering it unusable., but I did melt down some fat on the stovetop for gravy yesterday that was pretty good. Hunted down some crusty bread today, we will have prime rib sandwiches with au jus and oven baked french fries. The prime rib yielded 16 pounds, I trimmed the back ribs off and sent them to the freezer, quite meaty.

It came out really good, I was kind of worried as I cooked it, the smoker started out at 350 degrees and didn't seem to want to stay there. A good portion of the time it was in the low 300's. Three hours in, and the center of the meat hit 120 degrees. I pulled it off and it sat for an hour or so wrapped in foil in an unheated oven waiting for my daughter.
I sliced it up and it was at perfect eating temperature, the ends were lightly brown and moving to the center it obviously got rarer to a trickle of red slicing through the mid part of the steak. There was a degree of doneness for everyone to be happy, so this will be my default method qoing forward.
The blackened crust was a dijon mustard and fresh herbs with Mansmith's crusting rub. The Dijon really helps the herbs stay in place and season throughout the cooking cycle, and as you slice the beef, the crumbly crust distributes proportionately well. Always trust the thermapen! Best invention ever for the cook.

After Jason’s groaning board and some other postings here I am suffering from serious feelings of inadequacy! :^/ I’ll get over it but for now I’m thinking of turning in my apron and CIA credentials. (Uh, that’s Culinary Institute of America. Never had those anyway so it will be no loss.)

Yorkshire Pudding is mostly made, these days, separate from the beef and in an oven. Sometimes using pan drippings and sometimes butter. That way, it easier to control the process so it comes out right. It can be made after cooking the beef while the roast is resting. That is if you are patient enough to rest a beef roast. Mine are mostly small. So, resting is short duration. A big Rib Roast needs 40 minutes.

I learned from experience, pour that batter into a HOT pan. Whether glass baking dish, enameled iron or porcelain, make sure that dish is HOT before going into the oven. Otherwise is will not rise. It will be edible but not as fluffy as you might want.

Pork loin cooked slow all day in a crock pot with both sweet potatoes and russet potatoes. Candied carrots baked in the oven, and bread toasted with parmesan cheese. Washed it all down with sweet tea.

So full from last evening's prime rib, we lay around all day ,like two old snakes after a meal of rabbit...we had a slice of leftover cheese-cake at 1:pm, the ,at about dark I made a sandwich of thinly sliced roast pork & sharp white chedder, with Harry & David's honey dill mustard...my drink was also sweet tea.

Breakfast was the rest of my Yorkshire Pudding which collapsed into a nice eggy pastry. Topped with butter and Strawberry Jam. I gotta make more this when I have eggs again. That is always the limiting factor-- eggs.

next up after checking overnite e-messages, usual Sunday brunch. eggs, mangled ham slices & x-sharp cheddar in "griddle" part of GeoForman grill, all to platefuls of mess. Side of English muffins, her k-cup decaf, me same but cocoa. Finishing the paper,a snoozie then f.ball all afternoon.

Wife made biscuits this morning, tired of eating, gonna smoke a big cigar on porch, weather sunny, variable wind, just beautiful. Son going back to Houston, he’s got my last piece of Pecan Pie, Damn, Mom loaded an ice chest full of meals she had cooked, then vacuum sealed for him, Shrimp Stew, Gumbo, Red beans and Rice, Mac and cheese. I’m gonna eat Red beans and rice tonight. When he leaves pantry is pretty bare. I liked the report on Omaha stuff, wife has been asking about it.
