Trip to Chappell Hill so i now have jerky and smoked deer sausage link like jerky and 2 packages of pork sausage with feta and spinach. I had to use a five lb drilling hammer to get the sausage in the freezer. John if times are hard i can send you more dried beans so you can make beans soup. Also all cooking on GFG must be complete with cooking times and heat settings like Ed does for us. www.chsausage.com/I drive by that place twice every time I visit my neice that lives in Chappell Hill and I have never thought about stopping. That needs to change. You should stop in. They have a inexpensive and very good diner. The meat counter is top knotch with some of the best pork cuts as well as beef. The links are all fresh and very inexpensive. Did i mention real bacon or if you ask a uncut slab and it only 5.00 a lb. On top of all that the people who work there are very nice.

Left the crock pot on all night and the house smells delightful. NY strip with baby carrots, celery, tart cherry tomatoes and a few Yukon gold potatoes. I had to use up a big veggie tray that we picked up for two bucks. I ended up with plenty for the crock pot and five bags for snacking. Just a wee bit of salt, white pepper and paprika as the veggies are the real star of the show. So is it stew or gruel, but it is nice and thick with out being overcooked.

greets again all. Soon to be usual Sunday fixings of 4 lg eggs, mangled ham slices, x-sharp shred cheddar, to indoor GeoForeman "griddle" part & to two platefuls of mess. I eat mine at smoking room desk & continue with the paper. Hope quiet day with wife's aches/pains

How I love deep-fried onion rings and how I am too fat to eat them ever again. Woe is me!! Best onion rings ever and I couldn't finish a half-order. There was gravy, but not enough to cover the steak and my wife had to eat the half I brought home dry. 😁🤠 They brought out a plate of lemon slices for the table, thinking of the tea of course. I don't like lemon with the schnitzel.

I don't like lemon with the schnitzel. That is your privilege. It always seemed to me that CFS was the German settlers' version of Schnitzel and ought to be enjoyed the same way. Don't me wrong, I love a good gravy as much as anyone. At my restaurant, we served CFS on Sunday. Made from Ribeye steaks. A nice gravy was served for those who asked.

In Germany they might well make it exactly like CFS. Clearly, CFS and Schnitzel are different. Authentic Schnitzel is made from a pounded veal filet and, Jaeger from a Pork filet. I think of the CFS as a Texas-sized version of the Schnitzel using a steak cut which was on hand for the German immigrants. Both are truly great and I wish there was a Holstein Schnitzel right here right now. What makes it special is the fried egg on top with the capers.

Lunch was elk sausage- a bratwurst style, local elk, and more of my bean soup. I think one more meal and it will be gone. Except for the two quarts in the freezer. Elk is the only game meat my wife will eat. Friend from Montana sent us some, no grassy, wild taste at all.

Made a pot of Collards in ham shank broth. Jasmine rice on the side with my beef in red wine.
That broth will probably be kept over to make lentils or spit peas.

I suspect yours were feeding on grass and alfalfa just like cattle.

Chicken breasts and who cares cause its chicken and no matter what you do it will still taste like chicken. Larry i only make thick hamburgers as well it the only size my hamburger pressing hands come in. I make my personal hamburger almost raw in the middle but that depends on the quality of the meat. But then I like steak tartare, liver pate and other forms of moving meat. As for the Germans in Tejas if one goes to the LBJ Museum they have a 1860s German homestead on the grounds. Seems they pretty much lived off off cream cheese, eggs and veggies from the garden and what ever wild game of the day. Of course hams were cured in the fall.
