Just closed on the house and eating lunch at Luigi's in Atlanta. Eggplant parm. Congratulations. Let the Exodus from the Land of Pharaoh begin. Hopefully, you can cross Texas in less time than Moses needed and with better results. 4 hours, but still 12 hours 45 minutes from El Paso. 😜🤯🤠

Supper was re=heated elk medallions, charcoal grilled and sauced over brown rice. Brussels Sprouts and a large green salad. Elk is hands down my favorite meat. Not too much of it here in NJ unfortunately. Might have to do an elk for tobacco trade one day

I've had elk one time, in a poorly built home in a valley at 11k feet in New Mexico, off of route 4. The meat was in a stew and it was so tough that I couldn't chew it. It was also too cold to taste anything as the house had 2 story single glazed windows and a small pot bellied stove in the middle that had a couple of twigs in it. The couple that lived there were busted for dealing drugs in Los Alamos a few months later. Which explains the house if not the stew.

Our local elk are well fed on grass and alfalfa. A clean quick kill is best. Hanging the carcass helps, too. It takes a special kind of stupid to deal drugs in Los Alamos. The town is crawling with FBI agents and DOD Police. That is one place in NM where it pays to watch your step.

Big link of Best Stop Baudoin, Wife had Oral Surgery and pickings are slim. I have made boudin soup. A couple of links in some water and, depending on the boudin, a dash of Tony's.

Did I mention that his house at 11000 feet had 2 story single glazed windows and no heat? A friend of mine has a cabin and five acres, much of it fairly level, 11,000 feet, here in northern NM. It is for sale. Beautiful alpine place. Road accessible, next to an old ski resort. Borders on two large ranches. No electricity or running water. He lived in it with his three adopted Native Canadian sons years around for many years.

My dried Fava Beans arrived!!
I will be working on them this evening. They must be hot soaked and then peeled. Then cooked again. These came from Egypt where they know a thing or two about Fava Beans. US sources totally depleted after days of searching on-line.
P.S., I will cook then with a pork hock. This is where sympathy ends.
