Certified Angus prime rib with roasted garlic mashed potatoes, fresh corn, Sourdough bread, and a Caesar salad…Pecan pie for dessert. I have not even seen Prime Rib in a decade or more. It just does not exist here. I am glad you are able to enjoy it. I have memories of Prime Rib places from long ago. We were in the local store Monday and they had a case full of prime rib. Buy one get one free. Most of the customers were buying them but I didn't think I could cook it right. Then I got home and remembered the suis vide.

The other eleven and one half months we are lucky to find a Rump Roast or a Chuck Roast.

The other eleven and one half months we are lucky to find a Rump Roast or a Chuck Roast. The hills around here are dotted with black Angus critters and people are always needing to sell some. They are all fat and shiny. The grocery store has a real butcher shop. Cattle are slaughtered, cleaned and inspected at their farm, and into the meat case.

A red Clam Chowder on the stove. Celery greens, Italian Parsley, Swiss Chard, tomatoes, potatoes, carrots. Short on clams, of course, but enough to make it good. Just added a frozen Mahi Mahi filet. Can't hurt, eh?

Roasted turkey and mixed vegetables TV dinner. I ate my share of them over the years. Fried Chicken was my favorite and no one could quite match the peculiar flavor of Swanson's Fried Chicken. Also enjoyed their Turkey and Roast Beef dinners. Sometimes I would heat and eat two of them!

We called them iguana dinners because none of the pieces looked like part of a chicken.

I prefer doing so with indirect cooking over coals, the critical part is regulating temperature, and having a great thermometer.

I like them on the rotisserie. Not that I have seen them lately. LOL! The rotisserie is a really excellent way to go! When I worked for a meat company, we always did it that way at my uncle’s house, and it was always great. As it cooked, you could watch the melted fat race around the prime rib, creating a basting method that was extraordinary. I just have never had one myself. Doggone you John! Now you have me thinking about modifying my grill to have a rotisserie!

The trick I recall was balancing the prime rib properly as the rod goes through the meat, the tail is lighter than the other end… but then we were doing ribs that were around 20 pounds.

WOW, that is a heck of a breakfast! Traveled to eat at Rudys BBQ...came back home the next day with 3½ pounds of smoked turkey, 6 pounds of brisket, 2 quarts of creamed corn (which is my wifes' favorite) and a couple of whole sausages...good thing we had a cooler! Presently enjoying some of that smoked turkey...really great eating.

Homemade Beef on Weck sandwiches. Came out pretty good except we had horseradish sauce that tasted more like mayonnaise. My son ate his rolls yesterday so he missed out. Sucks to be him.
