Drove a neighbor into the Town of Toad today so he could shop at the market. He treated me to take-out from the local Chinese. I had Curry Beef from a carton eaten with chopsticks. We sat in the truck cab eating in silence. It was good tasting but this kind of "dining" is depressing as hell. I also tired of it on the road. When I was in New Mexico and California taking a meal at dine in prices to the hotel room, it just isn’t the same as dining out. But it was better than walking a mile to a restaurant in Las Cruces only to find out that drive up only was allowed... that sucked for this trucker that was out of hours and my truck wouldn’t fit in the drive thru anyway. Trudging back to the hotel for a mile with fried chicken and potato salad cemented the fact that I was going to find a local job. There is no difference between buying a meal in a supermarket over carrying out in a restaurant. At that point it is all arbitrarily decreed, and so goes the dining in option.

Heat with low-medium flame. Add plenty of ground ancho pepper and some garlic salt. When the meat is done add one can of black beans, sliced black olives, small petals of sweet onion, and sliced mushrooms. Sprinkle with cumin. Stir frequently. Add second can of black beans, splash of Angostura bitters, dash of ground coffee, pinch or two of sweetener (sugar or artificial). Let simmer a while. Chow down. Makes four meal-size bowls. Best with tortilla chips. I am going to have to give this a try. Thanks for the recipe!

Sliced beef brisket on a nice bun with fries and a couple of mozzarella sticks. It took about all I had to climb the stairs into and out of the place.

Ground turkey can make a great meatloaf when mixed with beef, and better with a bit of sausage. I was skeptical until we had it.

The meats compliment each other, kind of like how Perique complements Virginia. Pepperoni and sausage on a pizza is better than just pepperoni, etc...

Just finished up my version of “Everything but the Kitchen Sink” omelette: go through whatever looks good in the fridge and toss them into the skillet. Great way to finish up leftovers. 😁👍

soon to be usual Sunday brunch when da Mrs comes downstairs. Using "griddle" part of Geo Foreman grill, 4 lg eggs, mangled ham slices & cubes of cheddar, wind up as nice platefuls of mess. Have to take my word for it...most know am nowhere near camera friendly + the steps/moves to transfer the pics to the computer....basically gibberish. Wifie sez the plateful of mess very satisfying as is, no other "fillers"

Much of my cooking is determining ingredients by sight or smell. It's how my grandfather cooked, how my parents did, and how I taught our boys. My wife and daughter are meticulous, and produce table fare that would make Gordon Ramsay smile. I look at a recipe and immediately start thinking of what ingredients and amounts I can change. I love to cook, and while the stuff I make is palatable it's rarely very involved or complicated. Like you, my dishes rarely come out the same way twice. That's why I write the dates on the freezer bags holding the leftovers.
