I grew up on things like beef liver and onions, and chicken gizzards. Didn't really like them that much then. I passed on head cheese and a few of the more strange things my parents and grandparents ate - from "down on the farm". But now I really like chicken livers. Makes want to try liver and onions again. But the wife says hell no. We love calves liver and onions. Done right, Calves Liver and Onions is real treat. The old cook at our local Senior Center could do it right. Being where I am, elk liver is commonly available and that is also mighty fine. Mostly because our elk are grass and alfalfa fed.

Chicken thigh meat that has been marinated for 24 hours in a Greek sauce, and treated with Mansmith's dry rub and grilled. Bee-Ute-E-Full! I bet that was mighty tasty.

I usually make them in a small crock pot the night before. Order yourself a Country Ham or just some slices. I recommend this operation. Nice folks, great quality. Nothing beats homemade pasta. I need an extruder. I make my own spaetzle and use a knife to cut it. I could do that with pasta.

You are so right about home-made pasta. Nothing beats it, and it's worth the effort.
I do my pasta the old fashioned way. On the counter, with a rolling pin just like Great Gram did. That being said, I think I'm going to look into a pasta roller for doing the ravioli and tortellini. Much easier to get it thin and not overwork the dough.

A bowl and one half of my cabbage/potato/chicken soup. It looks like I have one big bowl left and that will finally be over with. While it is tasty and nourishing, eating the same thing every day can be tiresome.
