Shweetie and I worked together on supper tonight. Sautéed some chicken white-meat chunks in butter with garlic and onion in a cast iron skillet. Made a pot of rotini noodles, and a sauce out of chicken broth, sour cream and heavy cream. Mixed it all together with a little bit of Lowry’s, black pepper and Montreal Steak Seasoning to bring out the flavors. Served it with toasted sourdough bread. That’s how a cowboy and his lady whip up a supper. 😊

Cooked some chicken thigh meat in hot cast iron, then put in the convection oven to hit the safe temp....dipped in Flour, dipped in Eggs with garlic and oregano, then rolled into breadcrumbs. Caesar salad, and sourdough bread on the side.

It was, thanks. I am a big fan of searing meats in the wintery season and finishing off in the oven. The convection oven really delivers in that regard, crispy texture, juicy chicken. As each week goes by, I am impressed with my old cast iron skillets. After years of seasoning, they are more slippery than Teflon without eating Teflon in your diet.

all else just done in WAYS. To be Schwan #717, add cut up sausage link & shred cheddar, all nuked to plateful of mess. Add k-cup cocoa, all to smoking room desk, eat & continue with the papers. Will hold till mid-afternoon snack

I was a bachelor last night, so I had a guys night with my buddy Evan. We drank some good wine and then scotch, but started the night off with clams casino, followed up by homemade pasta with fresh pesto.

Scrambled 4 eggs, no toast or sausage. Time to buckle down and loose these last few stubborn lbs before spring and saddle time gets here. Don’t want no belly bouncing’ off my saddle horn. 😆

Ended up making a kind of taco stuffing of chicken, mashed beans, bell pepper and green chile. That is all I had on hand. Fried up some corn tortillas for crunch.
