Wife cooked a small Chuck roast in Insta Pot, gonna have roast beef sandwiches for supper. Smell driving me crazy.

Tonight's supper is likely to be a slumgullion of cooked potatoes, swedes (rutabagas), old steak, sausage, mushrooms, olt tomatoes.
That is if I can get the cats off of me long enough to cook anything. All day they have been on me.

0140, watching re-run of the old "Perry Mason" series. Very entertaining. Good plot twists and a cavalcade of great old actors.
Some of the tined corned beef on bread with seedy mustard. V-8 Juice, Low Sodium.
The Hash will be served with a couple of poached eggs later this morning, I think.

I went to San Luis as a kid with my mom on Easter back in the 60’s. My grandmother lived there for a bit before she met my grandfather. I bet it was good, John. We are blessed that a Thai family with extensive experience on Cruise Ships, moved into San Luis, of all places, and opened a restaurant serving Thai, Chinese, South Western and American dished and doing it all very well. They are the only place intown serving food and drink. There is a market and that is all. The two gas stations do not sell Diesel fuel and are often out of gasoline or just Regular, 85 Octane. San Luis is pretty much of a ghost town since the 1960s. Most of the stores have closed down. It is still a charming little town. Sad that it has shrunk so.

Rolled out homemade tortillas 12 inch, quartered and deep fried to make pocket bread to fill with beans and meat.
My mom called them Bunuelos, but she was more Native American so there was no cinnamon and sugar like the Mexican version.
Kind of nice for lunches this week, fill with meat, no refrigeration needed and take some jalapenos for the side.

Hadda go into town to meet with my attorney and on a whim stopped in the local and brought home a nice top round roast, enough for three generous meals. Popped a third of it in the air fryer for 8 minutes at 400° to get a nice outer crust (brushed with olive oil), then 18 minutes at 350° for the interior. Turned out on the rare side of medium. Pleased with the performance of the fryer. So easy!

I have some Cod Filets bought special and plan on breading them and running them through the air fryer as a maiden voyage.

John, this is now the most versatile cooking device I own. This afternoon, in search of a snack, I dumped about a cup and a half of frozen mixed veg in and gave it 4-minutes at 400°. Very satisfying.
