The wife made some egg muffins with spinach, green chile, and tomatoes, onions. Pretty easy and quick, she is going to make a batch for the workweek with sausage in it so I can grab n go during the week. That looks really good. I will have to try that!

Lunch was a cheeseburger and fries with a cup of green chile to dress the fries.
Major stuffing which led to a nap afterwards. Then work with the horses who arrived today. I have a new equine buddy named "Amigo", a 12 year old Sorel gelding. He took a liking to me and I to him. I fell while holding his lead rope and he stood there calmly watching me struggle to rise up. I am boarding four horses for a lady. Interesting mix. One Pasofino asshatt, so high strung he scares himself.

Been sloughing off for speed and convenience with frozen Taipei eggrolls in the air fryer. They come with packets of a sweetish orange sauce and I have been messing with it. Most successful so far has been the sauce plus a goodly splash of balsamic vinegar, a dribble of Angostura, and a light splash of Canadian whiskey. Tasty for dipping!

Egg Rolls in the air fryer are very good. Never thought of dipping them in Canadian Whiskey. I might try that with Bushmills. LOl. I get the sauce ingredient.

next move...Zweigle's red skin-on dawg, 12mins @300f GeoForeman grill, 2 slices AlCohen seeded rye istead of bun. Side of Musselman's smooth applesauce. All to TV for 6pm local/national CBS news feed. Later with company of Jeopardy, store brand tea & cookies.

For lunch: Walleye sandwich, on Rye of course, with a little tarter sauce. French fries, and an order of chicken livers with gizzard sauce. Bud Light.
For dinner: Just a turkey sandwich and chips.

Having some wheat thins with a bacon-horseradish dip along with my afternoon toddy, when I clumsily tipped the box over and spread about a full handful of chips over the floor. No worries— Jack to the rescue!
