A slice of my bread with butter and two small steamed hard eggs from local chickens. Steaming is a real improvement. A creamier yolk and easier peel. Pot of tea.

Lunch at the local Mexican Restaurant with my wife. Don't remember what they called it. Chicken covered with sautéed peppers and onions, with beans and rice. It was pretty good.

The wife made some egg muffins with spinach, green chile, and tomatoes, onions. Pretty easy and quick, she is going to make a batch for the workweek with sausage in it so I can grab n go during the week.

I make a frittata sometimes to grab and go over the weekends. The filler combos are endless.
