OK. But if the grits are runny they have too much water or are under cooked. They should have the consistency of mashed potatoes. πππ€ Every time I have had Grits in restaurants across the South, they have been runny on the plate. The Waffle House in Texarkana has pretty good grits, but yeah, tthey can be hard to find. Frank's Grill in NW Houston has good grits too. You would think it's hard to do it right.

Every time I have had Grits in restaurants across the South, they have been runny on the plate. The Waffle House in Texarkana has pretty good grits, but yeah, tthey can be hard to find. Frank's Grill in NW Houston has good grits too. You would think it's hard to do it right. And Waffle House has the best hash browns too.

Escargots and french onion soup. Baguettes from the frozen food department at Publix. Because I was too lazy to go buy them fresh from their bakery. I need to learn to bake. "Straight Dough" is the easiest. That is what Baguettes are made from. You will need a Baguette Pan. Get the pan, also: Bread FLour (Not All Purpose Flour, G.D. it!!!). "Gold Medal" BREAD Flour is fine as is "King Arthur BREAD Flour". Yeast in a jar. Kosher Salt. Squeeze bottle that makes a stream of water. Water. I am sure you have that. When all is assembled we will move to the next step. This is simple and you really be pleased with the results. OK, ready for part 3. Thanks!

A small package of Michelangelo's Lasagna. Polenta (GRITS) heated in clarified butter in an iron skillet with a small Cube Steak. Will be topped with the Lasagna.

Not because there is anything wrong with them but the pleasure of getting a Nathan's Famous or Vienna Beef Dog from a vendor with sauerkraut, onions and mustard simply cannot be done at home. Sadly, it has gotten hard to find them here in northern NM. Just a city thing.

Costco used to sell Hebrew National 1/4 lb franks, but now they use another vendor (probably Kirkland branded)..for $1.50 for that and a soda, it just can't be beat. The Sonoran dogs from the local food trucks are phenomenal.

Across the CO border, north, about 42 miles from here in the little town of Blanca Colorado is the Red Rock Market. Owned and operated by a Polish immigrant and his Ukrainian wife. Every month they drive to Chicago and return with all manner of Polish sausage and hot dogs. They have a deli which makes up these things. Why oh why have I not been going there??? OYYYY!

Breakfast was a small El Monterey Applewood Bacon and Egg Breakfast Burrito accompanied by a Red Chile Pork Tamale.
That covers all the the food groups.

next to be Schwan #662 (2 lg) toaster waffles, one cycle. Add usuals & nuke to plateful of mess. Add k-cup cocoa, all to smoking room desk & continue with the papers.

I've been taking care of them for 10 years and I give them a nice break when I can and they feed me every once in a while in return. It's nice having a handful of customers that are more like friends than customers. It is unfortunate that I lost a few because of the pandemic.
