The first time that I made Mexican steak, it seemed a shame that the gravy had no potatoes to go to. So I guess this is Mexigringo steak. 6 pounds of steak in the pot. Season the meat with salt and pepper, pound flour in with the meat mallet, and sear in lard. Add the meat, tomatoes, onions, carrots, garlic to the pot and simmer for 2 hours, add peas, cook for 15 minutes, then add chopped cilantro.

Reviewing the Do and Do Not of a Renal Diet.
Seems I must say goodbye to much of what I am used to eating and enjoy. Fortunately, there is absolutely no KALE in a Renal Diet. So, that is a point of agreement.
This means real change but the time has come.

A. The spices really settled in. B. I didn’t cook tonight.
Doing enchiladas with what is leftover tomorrow.

Steamed Pork and vegie dumplings, Chinese Style. Ixnay on the Soy Sauce and sweet sauce. Surprisingly low in sodium, phosphorous and potassium without the sauces.
CHARD added. The last I will buy since it is on the Renal Bad list.
From what I gather about Renal diets. No food value is the key. No carbs, no protein, no minerals. Vitamins are OK. Ditto fiber.
