Not eating it yet. I went to Smart and Final and picked up these on clearance: Following Steve Raichlen's instructions from his "up in smoke" cook book, made the brine, going to inject, and brine for 7 days, 10 hours cold smoke and 10 hours for a hot smoke....we will see in a week or so.

forgot to buy eggs yesterday. Will be two slices AlCohen seeded rye, one cycle. couple ham slices, two of American cheese, butter on bread. Nuke just enuf to be heated. Cut in half, to smoking room with k-cup cocoa, eat & catch up on the papers. Filling enuf till sups later

Lunch is farfalle pasta with Cajun Power sauce and meatballs. This sauce is pretty good and spicy. Needs very little doctoring.

I have never been a fan of Chianti or any Tuscan wine, preferring the sturdier wines of southern Italy: Puglia, Calabria, and Sicily or the more sophisticated wines of the northern Piedmont. Tuscan wines always remind me of the cheap California plonk I was raised with, LOL!

Albertson’s fried chicken, Dole Peppercorn Ranch salad, and a warm baguette. Banana split for dessert. Funny, our Albertson's in the town of Taos also does a very good fried chicken. Not sure if it is their "formula" and equipment, their employee's dedication or both?

Three eggs over easy. No side meats. Nothing left except the "emergency supplies" which I am reluctant to get into. Well, I do have tinned smoked herrings from Canada. Never was one for smoked herring in the morning. That is just me, lol!

Not sure if it is their "formula" and equipment, their employee's dedication or both? I love their fried chicken, even when it is cold having been in my fridge for the next day. I however will not buy the marked down cold chicken that they did not sell before, it is nasty. I think that they take the chicken directly from the heat lamps, off to clamshell container and into the cooler. The chicken sweats in the environment, resulting in funky chicken. The crisp breading is now a slimy goop, and the meat is soggy. If they wheeled it in the cooler on open racks for a few hours before boxing it up, they would sell more chicken.

was Schwan #506 ham/cheese omelet, add one sausage link & shred cheddar, nuke to plateful of mess. That & k-cup cocoa to smoking room desk, eat & finish up the huge holiday paper.
heat is here for couple days, 84, clear, to 88 later

Hoffy all Beef franks, hamburgers with Muenster, watermelon, Potato salad, cookies and Ice cream.
Hoffy makes a great frank, I hauled out of their facility in LA back in the 80's, they are the home of the "Dodger Dog".
A herd of grandcritters here today, a nice way to spend the day...off To Las Vegas and Pahrump NV. tomorrow.

seein' that the A/C is purring away, waste of $$ to bake anything, a Zweigles red dawg, skin-on, 12mins @300f on GeoForeman grill. Not bother with bread, just on plate, little salt & one slice Am cheese. Wash down with a Coke.

Our Albertson's deli counter does the same. It is because the staff goes home. There is none to package the chicken if allowed to cool. So, I buy hot and fresh out of the frier when in town. The counter people are wise enough to leave the paper bag open on top so it does not become soggy. I love fried chicken but hate to prepare it from scratch as it is messy and a lot of effort for home prep. I make an unbreaded variety that is pan fired.
