One of my dense and savory Naans. Made with chickpea flour and French fried onions along with the wheat flour and yeast. A meal in itself. Chick pea flour, you say? How's the texture and flavor? Flavor is good. Denser texture. !/4 Chickpea flour, 1/4 whole wheat flour, 1/2 unbleached bread flour. Yeast, sale, sugar. French fried onions and a tablespoon of homemade pesto. The chickpea flour is for protein.

Made a pot of something I cannot rightly call a "Chili" or "Chile".
Ground pork with TVP soaked in chicken stock, Aduki beans, Rice vinegar, rice wine, tamari sauce, Thai Garlic Chili Paste. It is quite tasty but I do not know what to call it. Maybe "Sambal Glop"?

French onion soup & escargot. In 1975, a co-worker and I prepared and consumed 128 escargot in shells. Garlic butter and French Bread. Along with a gallon of cheap Zinfandel. Some kind of record, to be sure!

It is quite tasty but I do not know what to call it. Maybe "Sambal Glop"? Supper was Sambal Glop with Udon Noodles. Sambal is a chilli sauce or paste, typically made from a mixture of a variety of chilli peppers with secondary ingredients such as shrimp paste, garlic, ginger, shallot, scallion, palm sugar, and lime juice. Sambal is an Indonesian loan-word of Javanese and Sundanese origin. Wikipedia

Too tired for steak, so tacos from DQ. Never tried their tacos, but I enjoy a DQ burger & a shake now and then. They're just regular tacos, nothing special. Hard shell, seasoned ground beef, lettuce, tomato and cheese with taco sauce in little packets. Quick, easy meal for the 3 of us when we're too tired to cook.

Too tired for steak, so tacos from DQ. Never tried their tacos, but I enjoy a DQ burger & a shake now and then. I used to stop at the DQ in Española NM when passing through town. Medium Strawberry Shake. Most welcome! Now, with COVID, the dining room is closed and the one Drive Thru window has a tail back way too long for me. Sad.

People don't seem to be dropping dead either. The only problem is not enough help. People are moving in from all over the Blue world looking for America and finding it.

Not enough help seems to be a problem all over. Taos certainly is suffering with closed businesses and restaurants doing take out only because they do not have enough waitstaff or cooks. I stopped discussing COVID with people long ago. No one believes anything published so what is the point, eh?
