Simple, but good. I make that often with either a pork chop, chicken breast, or pounded steak. Somehow, the chicken thigh has escaped such preparation. I will have to try it. I use Panko since I am off wheat products.

I generally do not sauce my ribs, but then everyone does not agree with me. Today I brushed the ribs with the sauce from Chipotle peppers in adobo sauce (pretty warm)...as I finished the ribs, I used Kinder's roasted garlic bbq sauce (sweet by comparison). Someting for everyone, the spicy met the sweet on the road to Tastyville Anyway, it pleased the wife that has an aversion to anything with a bite. And it pleased me that has an aversion to sweet meats, it is nice to have an intersection that agrees with all! Reser's macaroni salad, and Taylor farms steakhouse wedge salad.

I like sauce on baby back ribs, but only a drop or 2 on the bigger ribs and none at all on beef ribs.

Panang Curry with Roast Duck and Tom Yum Soup with vegetables. Mrs. Rios Thai Kitchen, again. Gotta make my way there...bucket list. There are certainly more extravagant Thai restaurants across the nation but we love the joint we have in San Luis CO. This is the first town settled and incorporated in Colorado. It is also dying owing to the decline of family farming. They have almost nothing there. Not one bar, a market with many empty shelves, two gas stations which often do not have fuel, no hardware or general store other than a Dollar store. The only restaurant or cafe is this place. Fortunately, they have an extensive menu of American and Southwestern dishes in addition to the Thai. So, we feel fortunate to have them here. If anyone is in the area, that is the place to eat.

Doing burgers and hot dogs on the grill, daughters and grandkids coming over for a meal and fireworks... Hoffy hot dogs and the patties are from Smart and Final, which is a SoCal foodservice cash and carry store that has warehouses locally (great meats). Iced down watermelon, and Best foods recipe for classic potato salad is pretty awesome...if you live east of the missisip' it is Hellman's. Best recipe on the planet, I have converted potato salad haters.
Not sure what the "secret sauce" is in the burgers, but they really rock! Hoffy (which I used to bump the dock in my rig in the 80's) has 1/4 pound all beef franks that are awesome.
Iced down "hint", Canada dry ginger ales of various flavors, Capri suns, Iced tea, and "tallboy" Arizona teas (Made in Ne York).

Spent the day with my Ex and her partner pal. Played Hearts and Dominos. Hot in Taos, about 92 with a light breeze. So, indoors for us septuagenarians was indicated. Later we fired the grill and did chicken thighs and breast sliced thin. Homemade potato salad, vegies, skipped the big salad we planned as our appetites are small. Desert was Alden's Organic ice cream and fresh blueberries. Gin and Tonics served first. A nice time.
