Two poached eggs on a mashed red chile pork tamale. A single strip of warmed over bacon. It is common practice here to serve a fried egg atop enchiladas, tamales with chile gravy, and other saucy dishes. I prefer poached... make a note for my Permanent File.

Just about any version of Huevos Ranchero is good by me! 👍😛 One of my favorites. Something I prefer to eat out as it takes a few pans to produce it.

Breaded frozen chicken tenders, reheated mash of potato and carrots, steamed Swiss Chard. Not the most delightful meal but it filled the void.

Darin and Mike, yeah, eggplant or zucchini are great substitutes for use in lasagna. Highly versatile. I add diced zucchini to meat loaf. Wish I had some now!

Put a meatloaf in the oven. One third each, ground beef (grass fed), ground veal, ground pork. Egg, Pico de Gallo, Panko, garlic, salt and pepper, rosemary. Glazing will be Mae Ploy Sauce, ketchup, dry mustard. I have not made one of these in a long time and looking forward to it. Not much in the way of lunch today, so I ought to be ready tonight.

Tortellghetti or Spaghettini? Many Italian dishes are a variation of the pasta with the marinara sauce. Tonight we decided to add 10 oz. of Trader Joe’s stuffed Tortellini with Spinach, Ricotta, Mozzarella, and Parmesan cheese. It worked really well, as the flavors “married” in quite quickly. Hoping that the old adage “Pasta tastes better on the second day” holds true. We failed to round up some sourdough for the garlic bread…. That… is inexcusable.😉

Ground veal or any veal is hard to get here as many find the slaughter of young beeves to be abhorrent. Albertson's market had one package of one pound ground veal. It makes all the difference in meatloaf and meatballs. Ground lamb is a good substitute.
