The usual two poached eggs on grits/polenta. A side of less than satisfactory Beeler Bacon. I will stick to Boar's Head Thick Cut or look for some other. Beeler does a fine job with their pork products so I expect they have a bacon which meets my rigid standard of quality.
Supper last night was buckwheat soba noodles with a sauce of Tamari, Fish sauce, rice vinegar, sherry, black bean paste, chicken stock. A little too salty but very tasty. That was followed by a bowl of cheese grits/polenta. This is a lot of carbs for me but what I seem to be able to manage with my few teeth and difficult stomach. I suspect my lack of grinding teeth means I am swallowing food in bits larger than my stomach wants to deal with in digestion. That could be a contributing cause to my stomach problem. So, food prep will have to be modified accordingly. We learn as we go if we are awake enough, eh?

Sunday lunch was the last of the meatloaf prepared long ago. With Dijon Mustard Sauce and cornichons. This meatloaf was much like the Pate de Campagne I remember from long ago. Fine ground grass fed beef, ground pork and ground veal. Parsley, celery, Panko instead of bread crumbs, egg, garlic, sage, rosemary. I must make another before long.

It has tons of flavor, it is right up there with the best sauce I have ever tasted. I give the hotter version and edge as I like heat, but had I gone there I would have two slabs to eat by myself, and an angry wife.

Breakfast of two poached eggs on a mashed red chile tamale with a side of Back Bacon.
Lunch, two cups of my own split pea soup.
Visited a Gastroenterologist in Albuquerque yesterday. She suspects an ulcer but in three months and three weeks I get the double exam- Endoscopy and Colonoscopy. Not happy it takes so long for the tests as I want to get to the bottom of this.
So, whilst in Albuquerque, stopped in at Cabela's. Noticed a lovely Winchester Model 1894 in .25-35 with 26 inch octagonal barrel. Made in 1910. They ask $1,300 which is about what I have seen on Gunbroker.com. Not something I want to spend money on now but I can sure dream about it. Long admired the rifle and that cartridge. It would mean handloading. The cartridge is still produced but hard to get.

Tried to eat breakfast, poached eggs on polenta with cheese. Quit about half way. No appetite and a little nausea and cramping pain.
Fortunately, I have a last minute appointment for a contrast dye CT Scan of the abdomen scheduled for tomorrow in Santa Fe. For once, a prompt test.

Pasta Fagioli for supper and this morning's breakfast. I added an egg to poach. Easy on my stomach without the tomatoes.
Whilst at the Radiology Clinic for a CT Scan with contrast dye yesterday, I noticed a Tibetan Restaurant across the street. Got their menu. No Yak on the menu as that became harder to get here. So, beef substitute. I am most interested in Mo Thuk. Aside from the cute name, a Tibetan Dumpling in beef bone broth. Many other interesting dishes. All new to me. So, I hope to visit there soon. I ain't-a going to spend all winter sitting out here alone. So, a few trips to Santa Fe are in order. I hope to get some venturesome soul to join me but will not wait on them.
