I decided yesterday that today I would bake some bread. Got my starter mix and let it sit overnight and put it all together this morning to see if I could get a rise out of it. Two hours later and nothing. Give it a fold and tuck and let it sit another 45 minutes. Again nothing!! The dough was hard and not pliable at all. Almost like biscuit dough. So I was about to chuck it in the bin and go sit and sulk, but, decided to try something else with it. My wife would make something called a Frazzele. It's Italian from her grandmother. So I rolled some out on the cutting board and gave it a good amount of black pepper,I like spicy things, and rolled it up into logs and cut it into 1" pieces. They went on some parchment paper and into the oven for 20 minutes and flipped then back in for another 10 minutes. And what was destined to the bin now is a somewhat tasty snack sized bread slice. Crunchy on the outside and soft in the center. The thicker ones seem to have this texture better but they all taste good! So, salvaged another disaster in the kitchen. Now if I could only figure out how to get the bread to rise??? Bread dough with regular yeast or sourdough?

Currently 13 degrees here. We've got about 3-4" of snow on the ground. At least the wind has finally laid down, after 2-3 days of howling. Other than going to the mailbox, I shall remain in of doors. You've got more snow on the ground than we do! Some parts of town got 8".

You've got more snow on the ground than we do! Some parts of town got 8". !!!!!!!! I didn't know that Memphis got that much snow.

The lowest my oven will go is 215º F. The house is warm 72º so it should have rose at least by 1/2 if not the doubling I was expecting.

So, if you used tepid water to bloom the yeast, then the yeast wasn't the problem. If your kitchen isn't warm, you might need to create a warm spot for the dough. I have set my oven to warm and let it heat up for a couple minutes. Then I put my bowl of rested dough in, keeping the door partly open.

Some parts of town got 8". !!!!!!!! I didn't know that Memphis got that much snow. It's not common, but it happens. Most we've gotten in this area in my lifetime was 16". But that was back when I was in college (and just ol ed was only 70).

Pete, I was using was Flieshhman's Active Dry Yeast. It's good up til Sep 2024. So I don't know what I did wrong. Never knew there was sourdough yeast. So, if you used tepid water to bloom the yeast, then the yeast wasn't the problem. If your kitchen isn't warm, you might need to create a warm spot for the dough. I had that done last year. Doctor opened my esophagus with a 55 French, whatever that is. It wasn't bad, but I had a hard time getting over the anesthesia. Not fond of this probe down my nose for 24 hours. Unpleasant. I don’t blame you. I've never done that. Makes it hard to retrohale I would think.

We’re getting -15 or lower every night and the past few days haven’t been above 1 or 2 above zero. “Feels like” today was -26. The pups are being real good about the confinement but Eli is about to bust.

My drive is such an ice rink that I got myself a pair of alpine crampons to stay upright. Great traction! Just what I needed. We’re getting -15 or lower every night and the past few days haven’t been above 1 or 2 above zero. “Feels like” today was -26. The pups are being real good about the confinement but Eli is about to bust. Get Eli some crampons, dang it! (And stay warm.)
