Homemade Chicken Noodle soup. Wife forgot to put the chicken in it until after I ate it. I mentioned that it didn't have much chicken. It actually didn't have any.

Homemade Chicken Noodle soup. Wife forgot to put the chicken in it until after I ate it. I mentioned that it didn't have much chicken. It actually didn't have any. That is a thrifty move on the part of the missus.

The cook was pi$$&§!

Thin slices of my home made bread. Fairly dense owing to using AP Flour along with the WHole Wheat. AP lacks the protein to make the gluten to provide the stretching which allows for dough to rise. Tasty, enough. Buttermilk and melted butter added to the dough.

One Red Chile Pork Tamale. I heated is one in a small iron skillet with clarified butter. This turns the Masa a bit crispy on the exterior. A nice way to enjoy tamales.

My country ham from Tennessee arrived. Saving it for breakfast tomorrow. Ham and Eggs! Might make grits, too.
Tonight, gonna whip up a little of Joe's Special. I enjoy that so and it is at the healthy end of the spectrum.

Joe's Special was made with extra garlic and crispy fried onions. Man, that is a good dish. Oh, Acorn squash on the side, baked.

I have family that makes it more like a soup. My Grandmother made it a bit wetter than this, but it was still almost like a goulash, and also added a bit of tomato sauce. Personally, I like it with just the beans & bean juice, olive oil, and garlic & onions.

I have made my own versions of all the Olive Garden soups. I like them, but mine are better. I'll be glad when I get settled enough to cook again.
