Camaron Supremo from the local Mexican restaurant. Shrimp and onions simmered in a creamy white mushroom sauce - with guacamole, rice, beans, flour tortillas. One of my favorites.

Country Ham and egg with grits for breakfast!
This is a smoked ham from Tennessee. I would put it up against a Parma Ham or Serrano Jamon any time.
Slice paper thin for sandwiches or biscuits. A little thicker for eggs. So good.
The fat cap is saved for other cooking.
eventually the bone goes into a broth for beans or pozole.

Ham and Beans with Polenta. I added some of my Country Ham, fine diced. Grits AND polenta in the same day! 😁 🤠 As you know, the difference between the two is the amount of cooking time. I placed the coarse corn meal in the crock pot at 0230, set on low, it cooked the rest of the night. Consistency at breakfast was grits like. A few hours later with more heat and stirring, a creamy polenta.

Snapper with garlic butter and a seafood salad. When I lived in California in the 1970s, Red Snapper was my go to fish which I ate often. I sure miss it.

Ham and Beans with Polenta. I added some of my Country Ham, fine diced. Proper peasant food on a cold day, nothing better. Would eat that over most dishes today.

Heated ham slices in the small crockpot for a few hours. Kind of a gentle steaming with large diced apples. Will add to eggs. Polenta (aka over cooked grits) on the side.
Earl Grey Tea in a pot. The old boy, Earl, did a nice thing with the bergamot spice.
