Opened a bottle of my homemade Amarone style red wine. Only 7 or 8 months old but it was pretty good. Great intense fruit flavor. At first, it was very astringent and a little bitter on the finish, but after several sips, it was fine. I'll wait to the 1 year point and try it again.

At first, it was very astringent and a little bitter on the finish, but after several sips, it was fine. I'll wait to the 1 year point and try it again. I used to enjoy Amarone, the biggest Red! A year of aging should help it develop. Two years would be better. I know how hard it is to wait.

I must try myself some of that. Never have and it's a shame, since the Bushmills brewery is 4 minutes away from me. I enjoy it. For my palate it is smoother and thicker than Bushmills and only a couple bucks more a bottle (at least here).

I had a shot of Bakers Bourbon last night. It is not that tasty when first opened, but after it's had a couple of weeks with some air in the bottle it's amazing.

Old Granddad only has a slight improvement, but other Bourbons seem to like a little air to mellow them out. I haven't noticed it with scotch or Irish whiskys. Sherry and port are smoother and more complex with a few days of air too.

Had a bottle of Cabernet Sauvignon with a steak tonight. A bottle of 2014 Lange Twins (Lodi) that I must have purchased at a Friar Tuck. It had mellowed out very nicely.
