I made my “old family recipe” of potato salad for today as we ready to attend a get together. I was paid one of the best compliments by the host in the past, who requested I make it for today. “ I have never liked potato salad, yours is exceptional”.
My old family recipe was peeled off the back of a Best Foods Mayonnaise jar 20 years ago or so. 😝
I do use only red potatoes though. I cut them to bite size and slowly boil, just as they get to the right texture, I drain the potatoes and put them into the ice bath which stops them from cooking.
That produces consistency (it is easy to end up with mashed potato salad from overcooking) and an added benefit in that the potatoes cool down fast through the temp danger zone.
When making potato salad, if not serving pork dishes, bacon drippings in the water to boil the potatoes, and crumbled bacon at the end. If made that way and serving with pork, it can be a porky overload. IMO.

Schwan just delivered after delay elsewhere in town. After needed nap, will be Zweigles skin-on red dawg, 12mins @300f on GeoForeman grill. Side of Musselmans smooth applesauce, one cup. Later with Jeopardy repeats, ice cream on a stick.

Last evening I pan grilled a nice big beef Loin Steak. I left it on the counter with the expectation I would cut off a piece to have for breakfast with eggs and enjoy the remainder some other time. It is nice to have on hand. This morning I found it on the kitchen floor and about 2/3 gone including the entire fat cap. Clearly it had been eaten from the top. I suspect "Luger" the feral cat who decided to come in the house and be a pet. He is much like a tiny tiger in his behavior. Lesson learned.
Enjoyed what Luger left me with two fried eggs and the last of the cheese GRITS.

next up, usual Sunday brunch. 4 eggs, mangled ham slices, cubes of sharp cheddar, all in "griddle" part of GeoForeman grill. Winds up two plateful of mess. Usual K-cup drinks for us both

My sister adopted a stray pregnant cat that was homeless. The cat gave birth to the kittens, and one Sunday my mom fried chicken early before the heat and we went for a ride. We came home ants the cat had eaten the fried chicken, all that was left was a plate of bones. My dad took that cat for a ride never to be seen again, probably in a burlap bag and into the river. My dad was a pretty hard man and from a different generation.

Lunch today was fried chicken with cabbage and blackeye peas at the Cass County Seat Country Cooking Cafe. Appetizer was pinto beans and sausage with cornbread and dessert was strawberry sheet cake.

Street Tacos. This is my favorite out of all the recipes I've learned so far. Please share your recipe, I love street Tacos and I'm always looking for new ways! I use the thin sliced steak, milesena or something like that. Slice those into 1/4-1/2in strips. Juice of 1 lime 1 tbsp canola oil 2 tbsp soy sauce 2 tbsp chili powder 1 tbsp cumin 1 tbsp dried oregano A little grated ginger 2 cloves garlic, minced Mix all that together and marinate the meat in it the day before, then pan fry with another tbsp of oil. Mix a tbsp of cornstarch with a little water and mix it in to thicken the sauce at the end. Serve with warm flour tortillas, quartered limes, chopped cilantro, chopped red onion, and guacamole. It's super easy and really tasty
