Is this not a cut you could buy from a local butcher upon request? Same animal. I have never seen that cut at any market around here. Forget custom orders, no one does that here. Even if you take IN your own steer, hog, etc, they cut it they always do. No special orders. I understand this cut is available in Florida as it is popular with Caribbean Hispanos and South Americans. As for the animal, I have been disappointed with the quality of beef in Toad. Some of it from Walmart tastes so odd even the dogs will not touch it. This beef is more flavorful than anything I have had in a long time. Local store butchers local cattle. A lot of the cuts look different from what you get at regular stores. 4 full time butchers. Exactly what do you call it? What other American cuts does it incorporate?

It is called "Picanha" by Spanish speakers. I see the USDA refers to it as "Sirloin Cap".

I just saw sirloin caps at my local Costco yesterday and left me puzzled. So you cant get a Sirloin Cap that's a damn shame a travesty ham a mockery and lots of other things unless you just go over to where the roasts are and find one. That's as bad as a can of tuna in water, unsalted butter, yellow grits and other messed up culinary delights.

Hey, I prefer tuna in water. I don't want them soaking it in some subpar oil... I'll put my own on, lol. Unsalted butter though... that's just wrong on every level.

More of the Picanha with mixed acorn squash and sweet potato, a medley of oat groats, red lentil and brown rice with pan juices mixed with sherry and reduced.

Good crumb texture but the oven just is not hot enough to get the crust I like.

If there were such a thing as a “standard breakfast here it would be this: two over-medium-fried eggs (no oil), some grilled smoked sausage (same griddle), two halved lightly-toasted and buttered tortillas, sweet tea. Works for me when I’m in the mood for something more substantial than a piece of toast.
