Just finished a raisin bagel with cream cheese. I made a big batch of meatballs yesterday, so they will be lunch or dinner.

I might heat up the Chicken Noodle soup I made yesterday. Buckwheat Soba noodles, my own chicken stock, chopped mixed greens, and diced chicken breast added to a family size can of Campbell's Chicken Noodle. While it tastes good out of the can, I was shocked to see how few noodles are provided. Chicken is merely a memory now.

After the lawyer we went to a seafood place that we had eaten at before and waited 45 minutes to get waited on. So we traveled all the way to Arkansas, 7 miles, to Meomyos Cajun restaurant. Had chicken and andouie gumbo and fried frogs legs. It was wonderful! 😁 🤠 😋👌👍👍

45 minutes is way too long. Someone needs a kick in the rear.
Half of a seven ounce burger patty with my own refried beans and spinach. Not feeling great but have to eat something.

It looks like it's hard to hire unskilled labor in Texarkana. Everyone who's willing to work already has 2 jobs. There were a half dozen people standing around and 2 girls working.

A month or so ago I bought one of those 10-1/2” square flat no-stick coated griddles from T-fal. About $17 from Walmart. Thought I’d try it as I like cooking on griddles. It’s gotten a lot of use. Heats almost instantly and cleans up quickly and easily— sometimes needing none at all. I often use it tandem with a bacon press. It’s a very versatile kitchen tool. So far it has held up remarkably well with almost daily use it still looks like new. If something were to happen to it I would have to get another one. I feel like a traitor to cast iron but I can handle that.

Thanks, John. It was really, really good.
I told the wife that I have been stuck in my Hispanic roots for too long, We are headed around the globe. Going to skip Asia though, that fare is too demanding to produce.

The Tasso has been open for a week. Thinking penne and a nice white sauce for dinner to use it up and Cajun pasta is always tasty.

This morning an El Monterrey Breakfast Burrito with Applewood Smoked Bacon in the skillet with my own refritoes with cheese and green chile diced. The usual pot of tea. We haven't been able to get the El Monteray burritos up here. The only ones we can find are far inferior. So we end up cooking when we don't feel like it.
