I haven’t had Salmon Patty since I was a little kid at my grandma’s house. We had a can of Bumble Bee Salmon in the cupboard for quite awhile, I looked up a recipe and found one that is Southern Style. The cornmeal added to that version does a great job of not ending up with a mushy patty, but not dry either. Broccoli and cheese on the side with bread.

I grew up with those and finally started making them myself about 15 years ago. I'm way over due for making a bunch. 2 cans I think.

My mom got us a nice Instant Pot for Christmas and we had a 2.4 lb chuck roast in that thing earlier. We're huge Crockpot users, often cooking something in our crockpot 1-2 times a week. It's really amazing how what could take 8 hours simmering in the crock, took just 45 minutes in this thing! Wife marinaded the chuck slab for an hour or two in some soy sauce and garlic seasonings, browned it up in the cast iron skillet and off it went into the Instant Pot. The thing cooks a pounds of meat in 20 minutes per pound. Had that over a bed of Basmati rice and ladled with the drippings left in the pot. Amazing how it turned 6-8 hours of slowcooking into the same results in 45 minutes flat.

Being a near-lifelong Southerner, you'd think I'd eaten chili with cornbread before, but I never have. It just wasn't a combo we made when I was growing up. Our chili accoutrement were crackers, cheese, and apple slices. (If you haven't tried apple slices with chili, I suggest you do. The cool/sweet/tartness really sets off the chili.) We nearly always have Jiffy cornbread when my wife makes chili. Lifetime yanks, although we do have property in Florida and have lived there briefly.

Dinner at a neighbor's. Hard driving in the the snow and ice. State had not plowed the road yet. His driveway is long and steep. Icy, so four wheel drive low range in First Gear, not "Low Gear".
Dinner was the best Chicken Parmigiana ever. Bowtie Pasta Alfredo with pancetta, peas and mushrooms, Italian potatoes with olives and prosciutto, Caesar Salad. Home made Italian bread with olive oil and caponata. His Pecan Pie for desert. This guy grew up in an Italian family restaurant business in Kansas City, used to cook there and knows his business. Best Italian American food in New Mexico!

be near brunch time afore always hurting wifie makes it downstairs. Will be our usual Sunday fare. Using "griddle" part of GeoForeman grill, 4 eggs, mangled ham slices (lo-salt), sharp cheddar sprinkled on top . Two platefuls of mess, nuked to proper temps. Usual k-cup drinks, her decaf, me cocoa

I am with you there Mike and millions agree! One only needs to look at what is left on the fresh veggie tray at gatherings. We had the 10 oz. frozen Green Giant simply steam...cut a slit and into the microwave for 6 minutes. Portioned perfectly for two of us.

That part of being in the meat business and later foodservice distribution is what I miss. Met some great families, and the Italian families especially up in north beach treated me like family....When they greet you with Paisano! You know that you are in good.

Got a ride north to San Luis, CO. A bachelor neighbor was looking for a meal. So, Mrs. Rios Thai Kitchen.
Tom Yum with Tofu. Number 5 Hot! Panang Curry with Roast Duck, Number 4 Hot. Amazingly flavorful and not over powering.
My observations after several meals there. Just sharing a few thoughts. I do not mean to lecture. The incremental number 1 to number 5 of the "hotness" scale is a misnomer. It is an increase in all of the spice flavors not just peppers. Eaten slowly with palate cleansing by the Thai Jasmine rice keeps the flavors fresh and removes some of the heat from the tongue. The capsicum and others spices are not really water soluble. So, the rice, when eaten slowly, cleans and cools. Best not to add the rice to the curry but eat it separately and plain or with a little soy sauce. My friend loaded his rice with a dark and hot Thai chili & garlic chutney paste. That gave him three heat sources. He is recovering from a Cold type virus and all of that heat really helps clean the sinuses! Surely it raises his body temperature by stimulating all systems. Washed down with water, it flushes one out. Truly therapeutic eating.
I find a cold Kirin or Sapporo beer really is tasty during all that. Sadly, no Thai Chang Beer or Singha is available. The Thais have the beer brewing down as do the Japanese, Chinese and Filipinos. San Miguel Dark would be most excellent with Thai food, I am thinking. Now, at Mrs. Rios Thai Kitchen, the beer glasses contain a large ice layer at the bottom of the glass. Kept in the freezer, with the beer on top as poured by the waiter, is quite good. I never was a fan of beer on ice but this really works with the Thai meal. It extends the beer over the whole meal while keeping it nicely cool.

Temp 29 degs this morning, big Roux on stove,chicken &Sasuage gumbo coming on down the pike, little unknown fact I worked for Mr Steen at his machine shop for a short while after I got out the Navy. Also for my prom night my date was from California, kin to head man Albert Steen, he had a 40 ft cruder and gave a a midnight cruise up the Vermilion River, he was a grad of Delgado trade school and was adamant I should go there, Navy I went and full circle worked for him when I Was discharged. Funny story, one year 2 dogs got in the open vat syrup cooking room, fell in vat, they kept cooking, no one wanted the free samples that year given to employees..
