Pizza for dinner. Store bought, but pretty good. There are some good ones now. Much better than the old Gino's and Red Barf, eh, Barron. I like the pesto pizza made by "Against the Grain" in Vermont.

Trying to make oven fried chicken wings. Not sure the old electric oven will stand up. Egg dipped and seasoned flour. Hoping for the best. Otherwise it is back to the tiny air fryer and two at a time. LOL!
Mississippi Long Grin rice in the rice cooker. Some kind of plant matter but not sure what quite yet.

Glad to see the freezing rain stop and the ice on the roads melting here in Illinois. It's 7:37 PM and the temperature is actually raising. Forecast is that the roads will be melted by 10 PM. My son may be able to get to work tonight after all.

Chicken drumsticks in the big iron skillet. For the dog, although I might appropriate one or two to add among the wings and rice I made last night. You see. I helped myself liberally to those wings at dinner and depleted today's left overs!

One huevo iberico and a piece of English toasting bread. Have been making the huevos in a cast iron pan, but tried a 10” copper-bottom stainless pan today. WAY BETTER! Also cooked it in “used” olive oil with various spices from a couple of prior meals. Most excellent! Best yet. Time to prepare: about 5-minutes. Really.

The last of my savory naan with butter and heated in the toaster oven.
Fresh dough rising, I hope. When it is this cold, hard to for dough to rise. This dough is 1/3 bread flour, 1/3 whole wheat flour, 1/3 chickpea flour with organic French fried onions and a measure of pesto I had on hand. Ought to be interesting. Probably denser than the last batch made with AP flour and WW flour.

There used to be a Greek place here called Yia Yia's that served a nice grilled salmon salad with walnuts, some kind of fruity vinaigrette (raspberry, maybe?), etc. Closed several years ago, sadly.

This meal was a nice, fresh change of pace from our usual winter dinners. Miss this sort of meal when it's cold outside.

Fillet Mignon from Sam's Club - cooked in the Ninja. And store bought cheddar stuffed breaded jalapeno peppers cooked in an air fryer. I buy these steaks by the 4 pack and vacuum seal and freeze each one individually. 500⁰F for 10 minutes in the Ninja - just to the point where the blood/juice turns brown. Great flavor to the beef. Seasoned with a sprinkling of Omaha Signature Seasoning and 5 thin pats of butter laid on top. Excellent! And part of a bottle (on a diet) of dry red wine. A Merlot that had been aged 6 months in an oak rum barrel. Wow! trailboss Thanks for your post about a year ago about the Ninja. Love it!

One day we realized "Hey, we can get pizza delivery" - so we did once - or twice. Now we've gone ~4 years since we had our last delivery. It wasn't as important as it first seemed.
