Country Ham, fried egg, Polenta and my own beans and ham all together in the skillet. Time to make another pot of beans. Pintos, Garbanzo, Mayocoba, Bolita, Black, Lentil? Which to choose?  ?

I vote Pintos ... cooked with hamhock, smashed, topped with queso fresco and served with warm tortilla chips and salsa. Currently enjoying some cheese enchiladas that could sorely use those beans.

I am leaning in the Pinto direction. For the last few pots have been the others and I miss the old Pinto. Ham Hock, of course.

I do all mine in the pressure cooker but still pre-hot soak for 90 minutes Otherwise, they will split. Water boils a 197 degrees (F) here. To make soft beans, either uses a pressure cooker or a crock pot and that takes 12 hours.

I heat my beans to a boil on the stovetop, cover and let sit for an hour or so, drain/rinse and proceed.
More of thye same, but if you lack a pressure cooker, it is still a timesaver.
I love beans of every sort. The problem with me is that I hate making a small pot o beans for 2 people.

Dressed up Red Baron Pizza. I do that with the Baron a few times a year. If I am lucky that is the pizza available at our gas station. If not, brand X. Not complaining. The Baron is an excellent platform upon which to expand!!!!!

Was supposed to make chicken and dumpling casserole tonight. Both of the damn stores near me were out of rotisserie chickens though. Upside is that Acme gave me a rain check for a free one because they didn't have any ready. So, chicken and dumplings tomorrow. Tonight was a frozen chicken pot pie.

I used to roast a whole chicken often. Now, I got for the pre-cooked unless it is a Capon which I can find occasionally.

Chicken tacos for lunch. Skinless, boneless sardines, with pickled asparagus, onions, and jalopeño slices for supper, with some kind of crackers. Simple.

Going with Mexican grown Fava Beans, already shelled. Alert all media. And a nice chianti? No one's liver and no Chianti...... this time. Mashed with garlic, parsley, tahini, Zatar seasoning, a splash of olive oil, diced tomatoes. Ful Muddamas, the national dish of Egypt. Kind of like Hummus.

Spam is vile if “untreated.” I cut it thin and grill it crisp. Makes a fine sub for bacon. Helps to use a bacon press to get it nice and crisp. 4-5mm is a good thickness.
