Brisket nachos.
As good as the brisket was, it has ran it's course in 3 days...my neighbor is getting a decent hunk of it tomorrow.

bowl of chili for dinner, fitting for this weather. Great minds think alike. Venison chili for the second night in a row around here...last night with homemade biscuit, tonight with fresh cornbread. Not one complaint about what some would call leftovers...chili is always better the second time around!

Same with spaghetti, I wonder if it all comes back to the spices marrying with the tomatoes. But then again, it can be that way with a pot of pinto beans also that has no tomatoes...it just seems more pronounced in the two aforementioned dishes.

Lunch was a chicken sandwich sliced from the impeccable breast of the pricey organic rotisserie chicken from Cid's Market. Slathered with mayo, topped with romaine lettuce leaves over one hand slice of Sage Bakery sourdough bread off the top.
Breakfast was a two egg omelet consisting of summer squash and tofu sautéed in olive oi. Seasoned with "Fly By Jing" hot chili oil paste.

Pulled a pan of Chili Colorado enchiladas from the freezer… made a double batch a few weeks back.
They looked like hell, but tasted very good.

Pulled a pan of Chili Colorado enchiladas from the freezer… made a double batch a few weeks back. They looked like hell, but tasted very good. One of my favorites from the days when I could eat dishes like that. I always made mine with stew beef or a roast cut into large cubes. Pork, bison, elk, mule also work well here.

Crispy tofu and Szechuan veggies. Now I know why I don’t eat out often Do you use a wok? I mostly use a French skillet (steel) on an eight inch electric element which gets plenty hot! I have been thinking about a flat bottom wok for US type stoves. I hope to upgrade to Conduction range top eventually. Have you tried this "Fly By Jing" Szechuan paste?
