Crispy tofu and Szechuan veggies. Now I know why I don’t eat out often Do you use a wok? I mostly use a French skillet (steel) on an eight inch electric element which gets plenty hot! I have been thinking about a flat bottom wok for US type stoves. I hope to upgrade to Conduction range top eventually. Have you tried this "Fly By Jing" Szechuan paste? Induction? Worth every penny. We were going to upgrade our electric cooktop to induction but ran out of money. We have a cover over it and just cook on the gas. Besides induction, gas is still the best. "Now we're cooking with gas!"

"Now we're cooking with gas!" Sadly, the only gas available here is LPG and that is now controlled by gangsters in NYC and Texas. I am afraid old Hank Hill would not recognize the industry any more! I will not submit to their felonious behaviors! Natural Gas transmission lines are nearby but not available to such as us here in Costilla. Only the big city folks may have it. LOL! So, looking at electric options, Induction seems the most practical and efficient. I used an Induction range in school many years ago and liked it,

Barbecue pork ribs from Ricky's Ribs. I wish I could get the smoked beef ribs though. About to have crockpot ribs in a couple hours here. Marinaded for several hours in brown sugar bourbon with carrots.

I cannot even find raw ones except for some itty bitty bones that might have been in beeves once upon a time. Hard to tell.

Llano appears to be smack dab in the center of Texas. Better be worth the drive! Shoot! it is only 700 miles. I could be there for breakfast or an early lunch when they open at midday. 698 miles. Everyone is entitled to a vacation.

The best barbecue places are all crowded and nobody masks, so you can forget about it. There are a few places around Austin that don't have seating, but be prepared to stand in line for 2 hours. Coopers is good because you can pick your meats at the outside pits but you will need to step inside to pay for it. TIA: Transient Ischemic Attack? If you look closely at the inside picture, there are 2 people who have masks hanging off their ears. If you decide you don't mind the crowd, it's less than 2 hours from San Antonio to Llano on a beautiful road that goes through one of prettiest towns in the state, Fredericksburg.

The thing about not having any money is it's easy to wait. 😊 We use an induction hotplate that is sitting on the unused electric cooktop. We've been talking about getting a second one. They work as well as the cooktop.

I’ll look up the Szechuan paste and grab some, haven’t heard of that one I gather it is a new brand that is receiving much promotion. THey include a little book with the jar explaining the different peppers used.
