Worked on seasoning my new 14 inch flat bottom wok. Being had hammered it does not sit as flat on an electric plate as I would like. Did some corrective hammering with a Ball Peen Hammer. Sits more stable but the eight inch iron plate does not have heat as even as I would like. How I miss a gas range!

Everything I eat lately makes my stomach burn up top. Stress induced ulcers? Or covid symptoms? Who knows.
Light tonight. Either a turkey sandwich, or a trusty ol grilled cheese. Maybe some soup, maybe not.

Maybe some soup, maybe not. Tomato based sauces really crank the stomach acid on me. I have taken proton pump inhibitors for the last few years (Pantoprazole) that managed it nicely, but from advice here, I was told long term not good… so I weaned off of it. Pepcid now and TUMS… have to rein in pizza too, beer and booze. Carne asada nachos tonight.

It didn't take much and heartburn would hit me like an Abrams tank. Zantac kept moat things in check for a while, but then I stopped taking those because the HB went away when I quit drinking (miraculous huh? Lol). The plan on to change some things in my diet, and keep some tums on hand. Hopefully that helps. If that doesn't help, I'll bite the bullet and get checked out ( urbino) Age is creeping up on me.

Since I stumbled onto huevos ibericos I have been experimenting with cooking with olive oil. Tonight I put two thick slices of a pork loin and three thick slices of a potato into some extra virgin oil at about 320°. That and a small bowl of brussels sprouts was dinner. I like this way of cooking. It is very fast and not oily as one might suppose— get the oil hot, but not smoking. I started out with a cast iron skillet, but have since discovered that a copper-bottom stainless steel skillet (10”) is even better and faster. I have a gas stove so it is easy to regulate temps.

Tomatoes and tomato sauces are a great source of inflammation. I have given up all Nightshade Family plants.

If it's acid/reflux, for me, I think the key ingredients were liquor and coffee. I took Prilosec long enough to let things heal so my cough went away, and laid off the coffee and my nightly glass of whiskey. That seems to have done it. I have a whiskey every now and again, and have started drinking tea instead of coffee.
